Fresh Thyme, Apple, Bison Grass Vodka and Bénédictine will have you falling for autumn with this comforting cocktail from our Bar Team. For extra elegance, top with the subtly sweet apple foam.
INGREDIENTS
Cocktail Ingredients:
50 ml Żubrówka Bison Grass Vodka
25 ml Bénédictine
75 ml of cloudy apple juice
15 ml of thyme syrup - pre-made or made at home
Finely sliced green apple
Apple Foam (optional):
200 ml gelatine mix
2 green apples
30 ml sugar syrup
1 egg white
10 ml vanilla syrup
200 ml apple juice
METHOD
To make the thyme syrup
Use 2 parts water to 1 part sugar
Dissolve the sugar in the boiling water, stirring constantly
Once the sugar is dissolved completely, add a couple of fresh thyme stalks, reduce the heat, cover, and allow to simmer for around 5 minutes
Remove the pan from the heat and allow to cool
Bring the water to a boil
Fine strain 15 ml of the syrup into separate glass
Add the vodka and Bénédictine to a cocktail shaker
Add the cloudy apple juice and thyme syrup and gently shake together
Garnish with finely sliced apple and finish with the optional Apple Foam (method below)

Apple Foam (optional):
Juice 2 green apple into a pulp
In a whipping siphon add gelatine mix, sugar syrup, egg white, vanilla syrup and apple juice
Shake to combine and leave in fridge to cool for around 45 minutes
